Today I describe the first days of harvest at Domaine Sigalas in Santorini, where I was for 10 days in total. My arrival, the first analysis, the first flavors and aromas... It's harvest time, it's a celebration!...

The second day of my stay in Santorini I witnessed the planting of a new traditional vineyard on volcanic soil, travelers from around the world, an underground canava, a famous dome, two historical wineries and their unique wines... Follow me then!

The explosive volcanic eruption that happened 35 centuries ago has created an eerie, charming landscape and the infertile land gives extreme pieces of art. My new adventure takes place in sunbeds, an old tomato paste factory and an Estate under the colorful sky of the sunset... Underwater experiments, indigenous yeast and mathematical equations spice up our story...

Flying winemakers, the Athens stock exchange, shares, marbles, visual art, tsipouro, horses and aged vinegar. Put them all together in a shaker, shake well and you get my new adventure; cool, refreshing and funny! The highlight of the day was my cycling trip along Marathon Lake with amazing views of the Estate’s organic vineyards...

On the occasion of a bike race at Nemea in which the wine writer Simos Georgopoulos participated, we visited with him at the Aivalis winery and got to meet the man behind it. The true meaning behind the name Christos Aivalis translates to characteristic and productive temperament, both bold and passionate, vibrant exuberance, biodynamic approach, love for small but quality focused production, inurnment of vineyards and wine handicrafts like 'Nemea Aivalis', 'Monopati' and 'Tessera'...
